The core of the Shun Premier blade is made of extremely hard VG Max steel and is sheathed in 32 layers of Damascus steel. This combination of different types of steel makes the edge hard and elastic at the same time. The blade, which is ground on both sides, is comfortable to handle due to its light weight and guarantees a clean and precise cut. The applied hammerblow surface –
known in Japan as Tsuchime - not only has aesthetic reasons, but also facilitates, thanks to the small air cushions created, the release of the cut material from the blade.

Thanks to its symmetrical shape, it is suitable for both left- and right-handed users. A continuous tang ensures stability and balance whilst cutting. As a special touch, the handle's end has been engraved with Tim Mälzer's bull's head, the professional chef's trademark.

Cleaning Rinse the knives with hot water before using them for the first time. Protect your knives by cleaning them immediately after use (with mild detergent). Then rinse the blade with clean water and dry it carefully with a soft cloth. Especially after cutting acidic foods, you should rinse your knives immediately. For your own protection, always wipe knives from the back of the knife toward the cutting edge with a soft dishcloth or towel. Under no circumstances should knives be placed in the dishwasher. Always wash the knives by hand to preserve the material and maintain the longevity of the sharpness.
Sharpening & Care Be especially careful not to leave knives with a natural wood handle in water for too long. For special care, oil the handles and blade of your knives from time to time with neutral vegetable or camellia oil. We also recommend that you have your knives professionally from time to time to remove signs of wear on the cutting edge and to maintain the and to ensure lasting sharpness. Due to the high hardness of our knives, sharpening steels are completely unsuitable. This guarantee does not restrict the consumer‘s statutory warranty rights. The guarantee is given by KAI Europe GmbH, Kottendorfer Str. 5, 42697 Solingen and only applies to the EU.

The assertion of the guarantee is free of charge for the customer. During the warranty period, the consumer has at least one claim against KAI Europe GmbH for supplementary performance in accordance with Section 439 Paragraphs 2, 3, 5 and 6 Clause 2 and Section 475 Paragraph 3 Clause 1 and Clause 5 of the German Civil Code (BGB).
The effectiveness of the guarantee obligation is not affected by the fact that one of the above requirements is not met.
