The new Shun diamond sharpening stones are an exceptionally high-quality addition to professional knife care. Developed for blades with particularly high hardness, such as knives from the Shun series, these sharpening stones combine state-of-the-art material technology with Japanese manufacturing precision and durability. The result: maximum sharpening performance, consistent results, and efficient sharpening.

These sharpening stones use ultra-hard diamond as the abrasive material and offer outstanding grinding power. Even highly hardened blades are sharpened significantly faster than with conventional whetstones. The sharpening stones do not need to be soaked in water before use. Simply moistening them before and during the sharpening process is sufficient, allowing you to begin sharpening immediately.

Thanks to the elaborately sintered diamond grit, the low-maintenance surface remains flat even after repeated use, showing only minimal signs of wear. In this way, Shun diamond sharpening stones provide many years of consistently excellent performance and reliable sharpening results.

Each stone is supplied with a silicon carbide dressing stone for cleaning and refinishing the sharpening surface. This allows residues to be removed quickly and easily whenever necessary.

To prevent the whetstone from moving, place it on a special stand or on a wet cloth. You do not need to soak the whetstone in water beforehand, but the whetstone should be kept wet during the sharpening process. Sharpen blades on the colored side of the whetstone.

For both double-bevel and single-bevel blades: Hold the knife as shown in Figure 1 and sharpen the knife while maintaining a constant angle to the whetstone. As shown in Figure 2, position the knife so that the angle between the knife's cutting edge and the whetstone is 45-60 degrees.

In the case of a double-bevel blade: As shown in Figure 3, the distance between the whetstone and the spine of the blade should create an angle of approximately 15 degrees. Sharpen the knife by moving it back and forth, using the full length of the whetstone with just enough force to lightly carry the weight of your arm without exerting too much pressure. When burrs appear along the opposite part of the cutting edge as shown in Figure 4, sharpen the other side in the same manner until burrs appear.

In the case of a single-bevel blade: Sharpen the cutting edge by placing the convex side of the knife on the whetstone as shown in Figure 5. Place the entire blade on the whetstone to lie flat against it when sharpening the reverse side as shown on Figure 6. Next, switch again to the convex side and apply the tip of the blade to the whetstone. The sharpening angle should be about 30-45 degrees instead to give the blade a two-stage cutting edge. The blade will become more resistant to breaking or chipping by this process.


For both double-bevel and single-bevel blades: Finally, remove the burrs that appeared on both sides of the blade by gently rubbing each side on an old newspaper sheet, on a piece of old cloth or on a leather strop. When the surface of the whetstone becomes worn or uneven or you notice any resistance while sharpening, rub the supplied dressing stone on the surface of the humid whetstone to remove asperities and make it smooth again. Please wet both stones sufficiently and keep them wet during the process.

Handling precautions

  • Only use the whetstone on stable surfaces and in a safe environment.
  • Markings on the surface of the whetstone will wear out during the sharpening process, but this will not affect the quality of the product.
  • The logo on the back side of the whetstone may also be erased by strong friction, but this will not affect the quality of the product.
  • Do not use a flattening stone to level the surface. When feeling resistance while sharpening, use instead the supplied dressing stone to remove asperities and make the surface of the whetstone smooth again.
  • This product is colored so that abrasive slurry is easily identifiable. When using the product, be cautious of color transfer due to the slurry splashing or adhering to objects or clothing.


Care instructions

  • After use, rinse the whetstone with water to remove sharpening debris, wipe it with a dry cloth, dry it, and store it in a place out of sunlight. Failure to dry the product sufficiently can lead to mold growth.
  • Please wipe off any dirt or moisture on the knives before storing them. Residual dirt and moisture can cause rust.
  • Natural minerals are used in the base of the whetstone (the uncolored section), which may result in some uneven coloration on the surface; however, this does not affect the whetstone's performance.
Caution Safety note:
Only allow sharpening and grinding of cutting tools to be carried out by trained persons or under the supervision of such persons.
Always use whetstones in accordance with the enclosed instructions for use and water them. Always work away from the body when sharpening.
Only check the sharpness of the knife with the paper test and never with your hand or other parts of your body. Place the whetstones on a firm surface and ensure there is sufficient working space.
