In contrast to the dark handle of the Shun Classic series, the handle in the Japanese chestnut shape is made of ash-coloured pakkawood. Due to the treatment with high-quality resins, the handle is particularly resistant to moisture.

Cleaning Rinse the knives with hot water before using them for the first time. Protect your knives by cleaning them immediately after use (with mild detergent). Then rinse the blade with clean water and dry it carefully with a soft cloth. Especially after cutting acidic foods, you should rinse your knives immediately. For your own protection, always wipe knives from the back of the knife toward the cutting edge with a soft dishcloth or towel. Under no circumstances should knives be placed in the dishwasher. Always wash the knives by hand to preserve the material and maintain the longevity of the sharpness.
Sharpening & Care Be especially careful not to leave knives with a natural wood handle in water for too long. For special care, oil the handles and blade of your knives from time to time with neutral vegetable or camellia oil. We also recommend that you have your knives professionally from time to time to remove signs of wear on the cutting edge and to maintain the and to ensure lasting sharpness. Due to the high hardness of our knives, sharpening steels are completely unsuitable. Storing When storing the knives, make sure that the cutting edge the cutting edge does not come into contact with other metallic objects. This can prevent damage to the blade.
