Cleaning
Rinse the knives in hot water before using them for the first time. After each use, make sure that the knives are washed without delay (with a mild detergen) and dried off with a soft cloth. Acidic foods in particular should be rinsed off immediately after use.
For your own safety, you should always wipe the knife away from your body and away from the cutting edge with a cloth or towel.
Knives do not belong in the dishwasher, under any circumstances. Always wash the knives by hand in order to protect the material and maintain long-lasting sharpness.
Sharpening & Care
Ensure that all knives with natural wooden handles do not remain in water too long. Oil the handle from time to time with a little neutral vegetable or camellia oil.

Storing
Achten Sie beim Lagern der Messer darauf, dass
die Schneide nicht mit anderen metallischen Gegenständen in Kontakt kommt. Dadurch können Beschädigungen an der Klinge vermieden werden.
The best way to store the knives is in a knife block, in a wooden drawer insert, on a wooden magnetic knife rack, or in the drawer with a blade guard or sheath.
A knife like a legend
Its characteristic Tanto blade shape establishes a strong connection to Samurai tradition, where it was used as a short sword.
The 30 cm blade impresses with a combination of hammered detailing and fine Damascus pattern, while the handle stands out visually thanks to its unique twisted spiral design featuring Corian elements. Each individual knife is further distinguished by a hand-struck serial number, the Kanji for Shi Hou, and the KAI logo on the end cap, making every piece a true one-of-a-kind creation.
Produced using an innovative forging process, the distinctive long and straight Dual Core blade of the Tanto slicer features a striking hammered finish extending from the centre to the spine of the blade. The cutting edge displays fine Damascus patterning. The blade design was inspired by galactic nebulae – vast clouds of interstellar dust and gas found throughout the depths of outer space. Another highlight is the expressive execution of the handle, including bolster and end cap. All three elements are crafted from Japanese SUS304 steel, featuring a matt finish on the handle body and a satin finish on the bolster and end cap.
