KAI produces the dual-core blade of the Shun Nagare Series in an innovative forging process. Here, two types of steel with different properties are combined to form a 72-layered piece of Damascus steel. The combination of flexible and robust VG 2 steel and an especially hard VG 10 steel results in a hardness of 61 (±1) HRC. As a result, the double-edged blades have a particularly long-lasting edge retention, and excellent sharpness.
The ergonomically shaped handle sits comfortably in the hand thanks to its soft, rounded lines. The forged tang in the handle gives the knife massive stability and balances the knife perfectly as a counterweight to the blade. The riveted handle scales made of grey-black mottled pakkawood, an impregnated and particularly resistant wood veneer, lend the knife warmth and value.

Tim Mälzer and KAI have jointly developed the special Junior chef's knife to make it easier for young chefs from the age of 6 to use knives safely when cooking together. The fine serrated edge of the stainless steel blade in combination with a rounded, blunt blade tip and a flexible finger guard support the safe use of the knife.
The Junior chef's knife also comes with its own knife pouch for safe storage and transport.
